In 2013, Ian was invited on board as the official chef-in-residence for Melbourne Racing Clubs newest venue, Black Caviar RestaurantCaulfield’s premier dining facility.


Ian said that, like the its namesake (the racehorse Black Caviar), he hoped the restaurant would fast become an Australian leader when it came to track-side dining.

“I want it to be the best food you can possibly get at the races,” he said. “and for people to come to the restaurant and the races as a whole package.”

Paired with exemplary service and unbeatable views of the track, Ian’s multi-course menu offers a sophisticated, restaurant-quality dining experience at some of this country’s most exciting horse racing events.
